This One Pan Baked Pork Chops & Roasted Veggies recipe consists of slightly sweet and cooked to perfection chops and delicious roasted vegetables. Your husband will love it, you will love it, and even your kids will love it!
It’s hump day…and boy does it feel like it. I had my alarm set for 4:30 am this morning so I could exercise before work and guess what I did? Yep, I turned that sucker off and crawled back into my warm bed…oh and I also lied to my husband as he was getting ready for his workout and said I had a headache. What’s wrong with me?!?
Well, I may not feel like being productive today, but one thing is right and it is this delicious pork chop recipe. I really surprised myself when I made it this past Friday. The pork chops were tender with a unique flavor and the veggies were cooked perfectly. My husband always says a variation of the following statement when he tries my food “This would be really good with…” or “Next time, try making it like this…” As if he has ever cooked anything other than spaghetti and grilled cheese!!! It has gotten so bad that I now expect it but when he took a bite of his pork chop, he looked at me and said, “This is good.”
OH MY GOSH. *Christy runs around the kitchen and dining room singing HALLELUJAH* I could not believe my ears…I honestly could have squealed with joy. Ok, ok…maybe I did. 🙂
Here’s how I made it –
Preheat the oven to 425. Wash and chop up all the veggies (I used broccoli, zucchini, potatoes, and sweet potatoes). Put the veggies around the edges of a baking pan. Make sure to leave space for the pork chops in the center. You can also have a separate pan for the veggies and chops which is what I had to do because I cut too many veggies!
Rinse the chops and place on the baking pan or in another baking pan if necessary. Season with chipotle garlic, garlic powder, onion powder, worcestershire, and then rub with brown sugar. Do this to both sides of the chops.
Place in the oven covered for 10 minutes then uncover and cook for at least an additional 15-25 minutes (or until the chops are done). If the veggies are on a separate pan, put those in the oven at the same time.
Then all you have to do it wait for the deliciousness to cool so you can eat it up!

One Pan Baked Pork Chops and Roasted Veggies
- 1 crown broccoli
- 1 large zucchini
- 2 potatoes
- 1 sweet potato
- 1 tbsp olive oil
- salt & pepper
- 1 tsp chipotle garlic seasoning (or other veggie seasoning)
- 4 Pork Chops
- 2 tsp Worcestershire
- 1 tsp Chipotle garlic seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp brown sugar
1. Preheat oven to 425. Rinse and chop all veggies. Line sheet pan with veggies and toss with seasonings and olive oil.
2. Rinse chops and place on the middle of the sheet pan. Season with Worcestershire, chipotle garlic, garlic powder, onion powder, then rub them down with brown sugar. Flip chops over and repeat.
3. Cover chops with foil and bake for 10 minutes. Remove foil and bake for at least an additional 15-25 minutes. Depending on your oven. Pork should no longer be pink in the middle.
